3 small, delicious pizzas from fridge leftovers

Woke up yesterday thinking of, for some strange reason, cornmeal pizza. The internet gave me this Martha Stewart recipe, which was really easy, and the dough turned out amazing. The hardest part was waiting an hour for the dough to rise (and rise it did: I’m always nervous that it won’t be able to, um, get it up).

I didn’t want to go to the grocery store, so I topped the pizzas with whatever was in the fridge, which made me feel thrifty AND creative. (Sorry for the less-than-professional lighting. I’m not a photographer, and I took these on my iphone.)

Pasta sauce + sauteed zucchini, garlic, red pepper, chicken sausage + chevre

Left: Trader Joe’s eggplant spread + spinach +tomato +minced garlic + chevre
Right: Smashed canned black beans + chipotle cheddar (was in slices, but crumpled it up and grated it) + tomato + Trader Joes’s smoky peach salsa

Huge success. I don’t know if I could pick a favorite. I’m now looking at my fridge in a whole new light: blueberry jam + goat cheese? Hummus + feta? Peanut sauce + chicken +spinach. Oh, the possibilities.
